Paleo Bacon & Egg Muffins

Yummm.. Guys, these are SERIOUSLY amazing!! They are so easy to make and they make so many we have TONS of left overs which are so convenient when on the go or for breakfast/lunch at work!

I start by preheating my oven to 375* then I make my mixture with 12 eggs, 2 full kale leaves (diced), 1 roma tomato (diced), salt and pepper! I mix it in a bowl and get my muffin tin ready. I spray each pan with coconut oil and line each one with bacon (Turkey or Pork *Both amazing!*)

I pour the mixture into the “bacon cups” and place in the oven for 30 minutes or until the muffin is set in the middle. THAT’S IT!!! Easy right?! It’s delicious and soooo healthy. Try it for yourself and let me know if you made any variations!
