There are some amazing paleo restaurants in nearly every state and I love discovering the hidden healthy gems near us, so was very eager to try Mmm… Coffee! after reading some very promising reviews.
Their menu had many delicious paleo options so my Husband and I decided to make a trip downtown to try it out! It was in a very trendy and artistic side of town in the Lincoln Park area off of 9th and Santa Fe. Their bistro was hidden in a gorgeous and secluded courtyard shown only by their adorable sign out front.
We were immediately greeted by some of the friendliest people we’ve met in a long, long time. The owners Jami and Derek were so very sweet and inviting which made the already lovely ambiance even more comforting. We asked what they were best known for and wanted to try it all! (They were one of the first 100% grain free restaurants to open in the nation!)
We started with their amazing soup that changes daily (They’re REALLY popular for them!) And my Husband LOVED it. Said it was the best soup he’d ever had and it was accompanied by some delicious plantain chips (My obsession) !
I had their Paleo Power salad which was amazing and we split their tuna wrap (SO GOOD) and INCREDIBLE bacon wrapped stuffed dates which was chicken breast roasted in enchilada sauce, stuffed into dates and wrapped in turkey bacon! *drooldrooldrool*
We couldn’t stop there. Jami was so passionate about the food she made we had to keep trying more as they were so creative, delicious and unique! Their mocha latte was delicious and they make their own chocolate IN HOUSE, so I had to try some of their delicious concoctions!
We finished our lunch with two delicious chicken legs which were simplistic yet delicious!
We asked what the best desserts were and decided to try one of each (of a few!)
Again, Jami is INCREDIBLE. Her food was amazing but her desserts were out of this world! She’s been eating paleo for a long time so has been able to master so many different techniques. We tried their muffins, cookies, cake, granola, macaroons, and punkin’ bar. It was all SO GOOD. Did NOT taste paleo or healthy but it WAS.
Her cake was AMAZING. It was a made from BEETS. It was an adorable dark purple color with delicious looking frosting on top and tasted JUST like a red velvet unhealthy cake would taste. We decided we’re coming to her for any cakes we ever need (She had sold a wedding cake she had made while we were there!)
The inside of their shop was adorable and warm – They have wonderful options for comfortable indoor seating and gorgeous outdoor courtyard relaxing. One thing I love is when a local business supports other local businesses. They have many items available inside from other Colorado companies such as kombucha, kale chips, beef jerky, etc.
After we were done I wanted to thank them so much for all of their kindnesses, wonderful food and inspiring creativity. I had the pleasure of getting to speak with them about their journey and got to take a fun photo with them in front of their paleo sign!
And it was Derek’s idea to grab their sign from in front with the mini bike attached to take a photo with Hudson on it.. HOW CUTE?!
This is by far our favorite new paleo stop. The people were amazing, the food was outstanding and the location was comfortable and upbeet(Like my food pun? 😉 )
We’ll absolutely be back and recommend anyone in the area (or visiting the area) to try it out – You’ll never want to leave.. I’m already missing it!!
Well, I’ve been getting regular massages (Every 2 weeks) from Bodhi Body and am continuing to see wonderful progress in my overall well being. Being a parent in general is exhausting so it does feel wonderful to get the pampering – But it goes so much farther than that.
When I went recently by myself, I had Zach who is an amazing massage therapist and was able to feel I had a little weakness in my left arm (I’m having a rough go with my nerve damage) but he was able to work it enough that I haven’t had ANY problems whatsoever! Nerve damage really wrecks havoc on my life as a Mommy and writer so it’s nice to know that I can get legitimate healing from massage and that I can see significant progress in how often I have the damage coming back.
My Husband has also been having some shoulder pain from work so I surprised him with a romantic couples massage with their therapists Tonya and Garrett. They were both wonderful and my Husband left feeling completely at ease and pain free!
They also started giving their customers gift bags that contain a gorgeous smelling candle that can be used as massage oil (And they’ll refill it once it’s all gone! How cool is that?!)
I don’t think it’s a mystery on how much I love this place. It’s helping me in so many different ways and I couldn’t imagine going without my bi-weekly massages now!

Y’all – I know, it’s been QUITE awhile since I last posted. I apologize! But we’ve been having an amazing time in Louisiana with some family and friends! Sooo happy to be home but also a little sad because there’s nothing quite like the South.. Southern hospitality, tons of history, antiques shops everywhere and sometimes the sweetest people!
It can be pretty nerve-wracking taking a 1 year old toddler on vacation whether you’re flying, driving or BOTH. It’s pretty scary imagining how your little one will deal with not being able to be independent and active so I tried my hardest to ensure I had everything planned and covered!
I started with cleaning the entire house. SPOTLESS. So when we came home there was absolutely nothing left to stress about but getting into bed and passing out after a long 17 hour drive! Then began a ton of packing, Hudson and I were flying but my Husband was driving so we were able to leave all of the bags with him except Hudson’s diaper bag. We got the CUTEST little bag from our neighbor that I used for a diaper bag and it fit all of the goodies he would need and could fit my tablet, phone and wallet as well. It made it SO much easier only carrying a backpack so my hands were completely free for my busy bee!
We were flying into Dallas since it was cheaper than flying all the way to Louisiana so we planned for us to fly in right as Brent would be driving by so he could swing by and grab us! It worked out perfect and Hudson was so great on the plane ride there – I kept him busy with tons of treats he usually wouldn’t get, toys he hasn’t played with before, movies on my tablet for him to watch and tons more! (We flew Spirit and although it went smoothly, I’ve NEVER met a ruder flight crew in my life.. Not to me specifically but you could very clearly tell they did NOT want to be there)
After we made it and got in the car we started our 5 hour trip East towards Louisiana. Hudson was exhausted so he very quickly passed out! (It can be so incredibly difficult to eat healthy while traveling AND why would you when in cajun country?!) We stopped and got some Whataburger since we didn’t have any in Colorado (Wasn’t impressed, unfortunately) then made our way to our friend’s house who was holding us up for a week! (Bless their hearts 😉 )
We were EXHAUSTED but quickly passed out and were ready for the next day. My Husband was going to be working at this Dad’s house all week helping him renovate so I had a week full of fun stuff for Hudson and I to do!
We started with a trip to our good friend’s adorable little store found in Ruston that has a ton of vendors that sell awesome rustic/unique goodies for the home, for the kids, for yourself (Got myself a pair of shoes for $20 that look EXACTLY like Yeezy Boosts Which are $3,000!!) It’s the cutest little shop and I could spend WAY too much money in here, everyday..
After our stop here we made the trip down to see Hudson’s half-brother (His Father’s oldest) and his family. They’re such great people and we had a full day of fun down in New Orleans planned for the next day! But first.. Food! Hudson had his FIRST alligator and LOVED it at Walk Ons. Tasted just like chicken except a little chewier and he digged that 😉
The next day we made the short drive down to New Orleans and it was absolutely gorgeous. It was a whole new world it seemed. It was full of culture, music, performers, amazing food smells I couldn’t even identify and more! There was also a lot people watching ;).
I was so wrapped up in the beauty of the old French architecture and the Hurricane Drinks 😉 I didn’t get a chance to take many photos but made sure to get some shots of the gorgeous Jackson Square!
We headed back after a VERY long day in New Orleans to Baton Rouge to see Louisiana State University (Geaux Tigers!) and get some beignets. The campus was sooo gorgeous but unfortunately there was a torrential downpour the entire time we were there so I couldn’t get out to check it all out but it was amazing to see regardless and the beignets were DELICIOUS.
After heading back we said our goodbyes and left back to our friend’s house and took it easy and Hudson had a blast hanging out with their little ones! They were all best buds.. 😉 Their land was gorgeous and made me SO wanna be out there for good.
We made sure not to eat completely healthy on this trip because we couldn’t miss out on all the unique and authentic food! Hudson enjoyed it too.. We found an ADORABLE little diner RIGHT on D’Arbonne Lake.. He had shrimp bites, his new favorite thanks to Louisiana!
He also LOVE my Zyloware sunglasses! I LOVE these too. They’re my first high end pair of sunglasses and they’re so worth it, they’re durable and classy! ❥
Before heading back to our friend’s house for some more relaxing we headed to his Papaw’s house for some lovings and to get some sillies out before naptime. He LOVED the big open space.. AGAIN.. I wanna move to the country as I believe he’s a country boy at heart 😉
Of course we had to leave and stop for some BBQ before nap time.. We went to Podnuhs and Hudson LOVED it and their sweet tea.. We had a lot of that there..
Some of the meat was a little large for Hudson so I had to use his awesome new Tiny Bites shears to cut some up for him, they worked great! ❥
We headed back to their house for the rest of the day to rest up for our very busy day the next day. We were going to Shreveport to see my Dad who lives in Texas! We don’t get to see him very often so it’s SUCH a treat to get to see him!
We woke up bright and early the next morning for our hour and a half drive West to Shreveport and once we got there were welcomed by the GORGEOUS Boardwalk on the Red River. Then by DAD! It was so so nice to see him. Hudson loves him so much and remembers him every time he seems him.. Even if it’s been awhile.
We started by walking around the Boardwalk, getting a HUGE sucker (Lucky little man), doing some shopping and riding some kiddie rides! He had a blast (Despite the stickiest of sticky humidity and heat :p)
We HAD to get out of the heat so stopped at a delicious little cajun restaurant called the Blind Tiger and it was delicious. Of COURSE Hudson had some shrimp bites ;). I swear, they make the BEST drinks down there. Everything was so sweet with a side of rum or whisky. YUM.
After lunch we wanted to continue being INDOORS. It was just too muggy.. So we found an awesome little kids museum that had the most AWESOME area for toddlers his age. There were water parks, (He splashed all the little girls and old ladies.. What a flirt.. Hahaha!) a fire-station, a construction zone, a store, and so much more! We spent FOREVER in there. It was SO awesome. I really wish we had a place that cool here.. (Maybe we do?! I should look that up! You should too!)
Hudson very quickly got grumpy (I’m sure the heat wore him out) so we just started driving around Shreveport and looked at all of the history. The gorgeous mansions and very, VERY old cemeteries.. We went through the cemetery twice, we loved it so much.
As sad as it was it was getting late and I had to get back home to get Hudson to bed as we had a long drive back to Colorado the next day. So we said our sad goodbyes (Even though we were gonna swing by and have lunch with him on our way out of state!) and headed back East to the house.
It was so, so sad to leave Louisiana as it’s a completely different feel out there than anywhere else I’ve ever been. But we had to get back home. So the next morning we headed out on our long 17 hour drive back to Colorado. I was not exactly excited to start the long journey as I wasn’t sure how Hudson would do but he was fantastic on our way to lunch with GrandDad. He had a ton of snacks and lots of toys (Again, I brought a ton of toys he hadn’t played with before to entice him)
We stopped in Denton, TX for lunch at Chilis with my Dad and he was so happy to see him again. We had great food, great conversation and Hudson flirted with our blonde waitress the whole time.. hahaha! But all of his flirting sure did tire him out because after lunch we started our drive again and he was OUT for hours! Thanks blondie 😉
Although it was sad to leave my Dad, again, we were so ready to be home so we kept trucking along and Hudson was good the WHOLE time. We played games, sang songs and just enjoyed the agonizing butt pain that came from sitting for SO long.
We finally made it home around 1:30am and couldn’t have been happier. I put Hudson down and PASSED out. It was such an absolutely amazing trip and now I’m officially obsessed with Louisiana. It’s a whole other world down there ❥
It IS doable to both fly AND drive with a 1 year old toddler – As long as you’re prepared!
I love subscription boxes. They’re so convenient and make for a nice treat for yourself, your pet, your baby, whomever! (We currently get Bluum boxes for Hudson and he loves them!) I have been looking for one for myself, though! So I recently found a cute one called Pins+Needles Kits that sends you a box on the 10th of every month and it’s got adorable sewing goodies in it!
They send you a pattern/instructions on how to make that month’s theme and they send you everything you’ll need to make this and get working on your machine! This month was a sewing machine cover and pincushions, sooo cute!
They had an array of fabrics, a cutter (Incase you didn’t have one!), wire, and really thorough instructions! I LOVE the box I got this month.. But still not sure whether I selfishly want to keep it for myself or give it to my Mom for Mother’s Day..
Decisions, Decisions! 😉
Highly recommend this to anyone who has a crafty Mama who is looking for a wonderful gift for Mother’s Day – Whether it’s one box or a monthly subscription! It’d mean a lot showing the thought that was put in as it’s something she can use many times over! ♥

When I was younger I was always around essential oils, I remember my parents had a cabinet FULL of all different scents and my Mom would put them in my bath every night and it always put me at ease. Once I moved out I didn’t realize how much of an impact it had made on me. It always made me feel more relaxed and calm.
It’s been almost 10 years now since I last used essential oils (WHY did I wait this long if I know it’s something I love?!) but recently my step-daughter has been having headaches almost EVERY night. So much so they’re keeping her up at night and making her feel “hot” – Poor thing. Although she has been taken to the doctors they always down play it and believe it’s happening for different reasons every time so I decided to take it into my own hands and find a natural remedy for her pain.
I found an amazing natural product from Migraine Magick – It’s just that. MAGIC for migraines. Using essential oils and natural ingredients it aids in healing physical pains, providing relaxation and more!
I personally sourced the highest grade of natural ingredients that have the healthiest, nourishing, replenishing and therapeutic vibrational frequencies for healing in order to ignite your inner you so that you can feel super radiant!
When I told her about it she was ECSTATIC – When a child hears there is a magical spray that can help them feel better at night (Or whenever!) whether it’s a headache, tummy ache, can’t sleep, whatever!, it’s like a dream come true. She asks for a quick spray for whatever is ailing her and not only is it making her actually feel good but it’s helping her not get into her own head, allowing her to sleep peacefully at night and play during the day without interruption!
I LOVE to use it when my head is hurting as well or when I just need relax! It’s such an amazing spray. It smells DIVINE and feels even better – Sometimes I get a little tingle from it too. I’ve also been using it as a perfume if I’m feeling a little earthy 😉
This stuff is amazing and we’ll definitely keep using it as it seems to make a huge difference for us all! (Especially my sweet step-daughter’s migraines which was my biggest concern!)
It’s also amazing for a little spray on the pillow before bed.. Smells amazing and the lavender scent is supposed to be beneficial for sleep as it allows you to fall asleep faster, sleep better and wake more clear and refreshed!
I take my phone to the gym with me to use my favorite timer for my Tabata workouts and for the longest time would just place it on the floor which grossed me out! But since getting these Ungrips I have been able to slip them on my finger and keep a better eye on the time I have left.
I got three so my Husband and step-daughter could have one as well and they love them! They both game on their phones and comment that the grip is really convenient for the landscape orientation!
My favorite use for it though would be taking my photos. There are so many times where I switch between holding my phone horizontally and vertically to get different camera angles and my phone slips out of my hand due to my slick case. I haven’t done this at ALL since getting my Ungrip.
It’s handy as a mother who can slip this on her finger without having to worrying about it falling when carrying around her VERY heavy boy who wants Momma 24/7 😉 It’s just 3M VHB tape that adheres to most surfaces and leaves no residues when removed and it’s a VERY strong hold!
We will not be removing these anytime soon as I can’t imagine not slipping my finger through this every time I pick up my phone! It’s a comfort now 😉

As a Mom (Or any parent that is) you know how exhausting every day can be. FUN. But exhausting.. My body has been really aching lately, my legs and feet in particular. So I was really happy to hear there was a place nearby, Bodhi Body, literally 7 minutes away!! And I’ve never had a massage so with Mother’s Day coming up so fast I decided I was gonna treat myself!
When I came in I was pleasantly surprised by how adorable and serene their little studio was. I was greeted by my therapist for the session, Kaley; She was so welcoming, sweet and soft spoken (Which really made it a peaceful experience from start to finish) She explained all of the details to me and asked if I would be interested in a new calming THC/CBD lotion. It is a topical, cannabis-infused lotion that only absorbs through the skin to provide localized relief for pain, inflammation and soreness. It smelled amazing and sounded really unique so I was absolutely interested in giving it a go!
They had so many different options for services. There was aromatherapy, hot stones, herbal balls for Thai Massages and so much more. Definitely will have to be back to try them ALL.
I was escorted into a very tranquil room that was dark and calming with gorgeous, relaxing music playing on loop. I was already feeling so peaceful.
Once on the bed I felt completely at ease and was quickly tended to. Kaley (Like all of the other therapists, graduated from the Denver School of Massage Therapy) was INCREDIBLE. It was so relaxing, the lotion was DIVINE, and Kaley was able to find every trouble spot and make the pain melt away. It was the most relaxed I have ever been in my entire life (I totally drooled a few times and 80% sure I fell asleep at some point)
I am never going to deny myself of this incredible treat ever again. It is SO beneficial and so amazing to have a little “me time”. Thanks SO much to amazing Kaley and Bodhi Body for such an incredible experience – This is perfect for Mother’s Day coming up, y’all! Treat those Mamas! 😉 I will be back and cannot wait for next time – I already wanna go back!

A few weeks ago my step-son Eliot was in town visiting. I thought it would be a really cool experience for him and I to have some Mom/Son time at a local Escape Room! He had never heard of them (I wonder if they have these in Louisiana!) and I’d never actually gone to one but always wanted to! So we went to the Boulder Escape Room for the Alien Abduction room – Luckily we happened to be the only ones theres and had a BLAST!
So I decided we would come back EVERY TIME he came to visit as a tradition 🙂 But after telling my Husband all about it he seemed intrigued as well so I booked us an Escape the Psycho Killer room!
We went yesterday and were again greeted by their amazing employee Robert (He’s AWESOME) The inside is always so dark and ominous and has a creepy song playing on loop for some ambient background sound. It really sets the tone for some eerie fun!
The Psycho Killer – You have been trapped by the Psycho Killer! This particular psycho is a fiend for puzzles. He has meticulously set up a game of logic that challenges your mental stamina and your ability to work with others. Now you must solve riddles, find clues, and outsmart the psycho killer before time runs out…
We were each separated into our own rooms and given one hour to escape! I began in a small room that had tons of locks, furniture and a piano.. After looking around I quickly found many puzzle pieces that eventually gave me a four digit number. I could hear my Husband across the wall and found a little tube that we were able to talk through. I gave him the number from my puzzle that he was able to use on a lock in his room that gave him a key to my door! (This game is ALL about teamwork and mental strength)
After transferring the key through the tube I was able to get out of my room and unlock his door! So we were able to quickly get to work together and find the other clues hiding in his room!
In his room we were able to find a DVD that played a video of the killer teasing us and giving us one little hint that allowed us to open the safe in my Husband’s room. After that we were flying through and were sure to escape!
With 20 minutes left we searched high and low, used a blacklight to read hidden clues in paper and played keys on the piano that were on a hidden message to try and decipher the code! Sadly, with only 2 minutes left we finally started to understand WHAT the last step was and solved the riddles given to us.. But we were not able to complete it in time! (It’s actually really challenging! We loved it!) We were 95% of the way done on a room that only has a 22% success rate. SO CLOSE. And for only two of us?! We were SO proud and frustrated at the same time!
It was such an amazing experience to get to do together and we truly worked really well as a team! It was like a unique kind of date night! We had a blast and talked about it for hours after!
The Boulder Escape Room is fantastic for all ages and is a blast for date nights, work events, or pretty much anything! The staff is fantastic, the ambiance is awesome and it’s something we’ll absolutely come back to do again and again – Especially when they come out with their new rooms (They swap them out every 6 months and will be opening a new location soon with even more rooms and actual jump scares – That would definitely be motivating 😉 )
I highly recommend them to anyone! Kids, adults, teens – Anyone! Try them out! They’ve got a great Groupon deal going right now – Boulder Escape Room Groupon Deal !
I have recently ventured out of my comfort zone and joined a local bloggers club. At first I was a little hesitant about going to an event (I can be a little shy :p) but it was SO much fun – This is an amazing group of bloggers and a lot of them were also gluten free bloggers! I think it helps that it was a mixology meet-up 😉 And Sproutswas gracious enough to cater our event for all of the bloggers and it was a delicious spread!
We were learning from Barb over at Creative Culinary about how to make some delicious margaritas! I thought at first, “I know how to make margaritas!” But man, was I wrong. I’ll never go back to the basic mixing of Tequila and margarita mix! She taught us how you can and SHOULD be making this delicious drink to give it different flavors and dimensions.
We started by muddling a few different ingredients which were strawberries, blueberries and limes until it was nice and mushy (It really helps bring out the flavors) then added the pitcher mixture (lemonade, limeade and tequila) into our muddled shaker goo then we shook, shook, shook it up!
After rimming my glass in Barb’s amazing salt/sugar mixture with lemon, lime, and orange zest creations I poured my DELICIOUS margarita into a fancy glass and NOW I’m addicted. I’ll literally NEVER go back to normal margaritas – How could you?!
So now, I’m a margarita PRO and made some amazing new blogger friends in the process (It smells when the margarita melts all your shyness away ;)). Try this recipe out for yourself, you’ll LOVE it! And it’s SO simple! Also.. Fruits are good for you, so that too 😉
My Husband and I had only driven through Pueblo, CO to get to Texas and maybe for a pee stop.. But never had I actually ventured into this city. I am so regretting I hadn’t yet. This little town is AMAZING.
My Husband, Hudson and I decided to stay the night over in Pueblo because I had an eco-friendly Earth Day segment on KOAA News 5 EARLY in the morning the next day! Our drive down was LONG but we made it – And JUST in time to have some amazing Bingo Burger! This place is SO good. It’s like Five Guys, but better.. YES, I said it! They had SO many amazing and healthy options!
We were able to enjoy some of their signature burgers WITH the option of making it a lettuce bun to keep it paleo and we had some of their DELICIOUS sweet potato fries with their unique lemon-rosemary aioli and thai chili ketchup dipping sauces! SO good and SO much food! (We JUST finished their sweet potato fries we had brought home!) The manager Steena was so very sweet and welcoming. We’ll definitely be by again next time we’re down that way!
After our much needed and delicious dinner we headed to our hotel. (Best Western Plus – Was so incredibly displeased with their service unfortunately. We will not be staying with them again in the future) Despite the frustrations with the hotel, our next day was SO much fun. I was super nervous about being on live TV for the first time but the staff at the station was SO friendly, understanding and helpful!
I breezed through each eco-friendly item thanks to their support and then I felt sad after it was all over – I wanted to keep going! You can watch my segments here!
Although I wanted to keep going, I had a full day of fun planned with my guys – I LOVE Riverwalks (If you’ve seen my San Antonio post you’ll know I can never go back now that I’ve experienced them, I have to see them ALL!) so I wanted to visit the Arkansas River Pueblo Riverwalk. It was breathtaking! There were historic buildings surrounding an amazingly, beautifully planned walkway with mini waterfalls, artistic touches and sculptures everywhere. I felt as if I was in an art district – Something that was so unexpected but I cherished and loved every moment of it!
We built up quite an appetite walking around in the warm weather so we headed to a highly recommended local restaurant called DC’s On B Street. I had seen their reviews and food photos online and was INSTANTLY intrigued. We walked in and were pleasantly greeted by gorgeous vintage feels and the sweetest woman, Sara. We were also greeted by the fun and talented owner DC!
Their restaurant was beautiful but their food was EVEN better. They had GORGEOUS presentation with AMAZING flavor. DC is a MASTER cook and Sara has the best recommendations! Brent decided to get some fresh Halibut (From Alaska!) and I got an amazing strawberry and walnut salad. The Halibut was cooked to buttery perfection and the salad was DIVINE.
After dinner, Sara told us their pies are homemade by her talented sister! We could NOT say No!! So we got a pecan pie with a side of ice cream.. Just couldn’t resist and I am glad we didn’t it was PERFECT. And we know our Pecan Pies – Two southern folks 😉
We decided we’ll be back here EVERY TIME we’re in town – Not just because of their amazing food but because of how amazing Sara and DC are.
This ended our Pueblo trip and it was bittersweet. There’s no place like home, but we really enjoyed being here, even if just for a day! Like my title suggests, it’s a hidden gem that we’ll be HAPPY to come back to 🙂
