Again.. Y’all KNOW I love local places that have paleo/gluten free options and I found one that’s literally 8 minutes down the road. A new hip spot called EAT! It’s in the lively shopping centers across from Flatirons Mall seated on the edge of Broomfield.
When you first walk in, you’re greeted by an industrial rustic vibe and friendly staff! The menu is full of classic brunch foods with unique twists, but don’t be fooled because they also provide health conscience items to meet your dietary needs!
They had amazing sweet potato fries and were able to provide us with gluten-free options for our burgers! *They had three different GF bread options, how awesome is that?!
Their drink menu also included some very unique recipes that were delicious additions to our brunch! (They grew the mint in house and used it for their drink infusions.. I love that!)
As amazing as the food and people were at the restaurant (Talking about you David and Alex!) the thing that really stood out to me was their amazing kid’s menu. It doubled as an activity booklet that used a PENNY as the writing utensil.. How eco-friendly is that! No waste, no chemicals.. Just a penny. I love it and I am hooked on that idea!
We’ll absolutely be back again – The hospitality and atmosphere makes you feel as though you’re in a hip downtown eatery but it’s in our own backyard and it’s super kid friendly! Thanks EAT!

Flower Child – a restaurant that serves made-to-order, healthy food in a fast-casual setting – is opening on Wednesday, August 22 in Boulder at 2580 Arapahoe Avenue! The restaurant offers conveniently nutritious and delicious dishes, including salads, hummus, soups, plates, bowls, wraps and a kids menu in a light and airy environment with modern bohemian decor. Flower Child is celebrating its opening by donating a portion of proceeds from grand opening day to local non-profit Boulder Food Rescue and providing several local-inspired giveaways for its first customers.
“Our mission at Flower Child is to provide healthy food for a happy world, and to us, that starts at the community-level where our restaurants are located,” said Sam Fox, Founder of Fox Restaurant Concepts. “We’re excited to be in Boulder and support locals’ active lifestyles with our nutritious menu. Similarly, our partnership with Boulder Food Rescue is a natural fit as they are focused on a less wasteful food system and providing healthy food options to low-income individuals.”
To invite guests in on opening day, Flower Child will be hosting several giveaways on August 22 including:
● Handing out complimentary flower bouquets from Boulder Gardens Florist to 300 lucky guests
● Distributing flower seed lollipops from Amborella Organics. Eat the lollipop and plant the stick in your garden for a flower or herb surprise!
● Sampling Rowdy Mermaid Kombucha throughout the day, which is available on tap daily at the store
Flower Child features vegetarian, vegan, and gluten free menu items. Guests also have the option to add all-natural chicken, sustainable salmon, grass-fed steak and organic non-GMO tofu to their meal. The menu is divided into six categories including: Salads, Hummus & Soups, Plates, Bowls, Whole Grain Wraps and a Healthy Kids menu. Guests can order organic juices, organic cold brew on tap, coffee, seasonal lemonades, organic wine, local beer or signature kombucha on tap. Each menu item is made-to-order, fresh from scratch in a full-service kitchen.
● The Rebel Wrap – grass-fed steak, charred onion, port salut cheese, arugula, horseradish yogurt
The restaurant space seats 68 and includes decorative tile, painted brick, bright stone tables, and greenery throughout. A large mural is painted on the outside wall of the restaurant next to the patio, which seats 28 customers.
For opening day, Flower Child has partnered with Boulder Food Rescue (BFR). The non-profit organization’s goal is to create a more just and less wasteful food system. BFR facilitates the sustainable redistribution of healthy food to agencies who service low-income individuals and participatory No-Cost grocery programs.
To further celebrate its opening, the restaurant is hosting a lemonade stand on Saturday, August 25 from 11 a.m. to 1 p.m. outside of McGuckin Hardware, giving away free lemonade samples and Flower Child swag. McGuckin Hardware is located at 2525 Arapahoe Ave. in Boulder.
Flower Child will be open for lunch and dinner from 11 a.m. to 9 p.m. The restaurant is located at 2580 Arapahoe Avenue in Boulder, Colo.
My FAVORITE Denver restaurant – Marcella’s Ristorante, Pizzeria & Wine Bar, located in the LoHi neighborhood of Denver, is thrilled to announce the launch of Sunday brunch featuring chef-driven cuisine inspired by authentic Italian recipes. The menu includes shareable antipasti, hot and cold plates, pizzas, soups, salads, pastas and delicious brunch entrees. There will be Sangria Sundays, $20/person bottomless; Bellinis, mimosas and bloody Mary’s in addition to Italian wines, handcrafted cocktails and local beer. To kick-off brunch, the restaurant will offer bottomless sangria for just $10 on Sunday, August 19 and Sunday, August 26.
“Brunch has become a widely popular event for locals and visitors alike,” said Dain Cooke, general manager at Marcella’s. “We are thrilled to bring it to our LoHi location and offer guests a chef-driven menu with Italian-inspired twists. In addition, there are such items as Truffle Eggs with poached eggs, toasted ciabatta and taleggio as well as Shrimp Polenta with poached eggs, toasted garlic, tomato and basil.
Marcella’s seats 152 guests inside and 40 guests on the patio, which faces downtown Denver. The large patio offers unobstructed views of the city. Marcella’s is located at 1801 Central Street in LoHi. Free parking is available in the Centric building where the restaurant is located and complimentary valet is available on weekends for dinnertime.

Y’all with girls are sure to understand – There is nothing more magical than princesses… My step-daughter LOVES all things Princess, even at 7 years old and I love it. It reminds me of a simpler time when I too still envisioned myself as a princess finding my prince charming 😉
When I heard The Melting Pot in Louisville, CO had a Fondue Fairytails event I HAD to take my kids! My step daughter dressed up in a lovely Arielle dress, a tiara and brought a mini koala pet.. “Because every princess has a small pet in the movies..”
The boys dressed in their Sunday best and we made our way to their restaurant! It was SO adorable – It looked like an old mine.. Very Colorado-esque!
Their staff was so welcoming and sweet and REALLY got into the Prince and Princess roles.. It was so genuine and fun for the kids. We were sat down and immediately greeted by one of the best waiters we’ve ever had – Kay! She was so sweet and REALLY got our kids excited about the foods and events!
It was only $34.95 per adult and $19.95 per kid and it included a 4 course meal!! The kids were ecstatic when asked which kind of chocolate sauce they wanted in the end 😉
All of the meals were amazing and they were very accommodating to food allergies/preferences!
There was dancing, singing, games, hand outs of tiaras/crowns/wands and in the end they gave the kids autographed photos of Princess LaFonda (HAHAHA – She said it was like Napoleon Dynamite) and the King (Who told Brent he was going to the “Pit of despair, dilly dilly” LOL)
It was such an amazing experience for both my kids and us adults and we’ll absolutely be back SOON (The kids are already asking!)

Italian food has always been a temptation for me. The smells, the pasta, the marinara sauce. It’s all. Just. Amazing. So when I heard about Marcella’s Ristorante opening in September in the fancy new LoHi neighborhood I jumped at the chance to try it!
As soon as you drive up you’re hit with an absolutely gorgeous view of downtown Denver. (Picturesque place to take anyone visiting Denver for the first time, or anytime!) And an even more stunning scene is when you walk into the restaurant itself. The interior embodies elegance yet the music keeps it hip and inviting. It’s got an upscale feeling without the outrageous upscale pricing – Which is SO nice for families (Especially parents on a date night 😉 )
I was seated by the nicest hosts we’ve had in awhile and our server Hannah was delightful. The smells instantly made us hungry and we were excited to try it all! But we started with their Tuscan LiMonata cocktails first and fell in LOVE – It was made with theirHousemade Limoncello and you could absolutely tell due to the sheer freshness it had ❥
We had some delicious bread brought to our table but when we mentioned our usual strict paleo habits they brought us their gluten-free menu and bread to try. It was SO SO good – And so thoughtful! They’re so considerate they even have a whole different pizza oven dedicated for gluten-free sensitive people so it doesn’t touch gluten!
We decided to next try their appetizer meatball and were blown away. It was literally the best meatball we’ve EVER had. HOW can something be cooked fully yet crumble apart in your mouth?! *Drool*
This definitely excited us for the entree which we decided on their Sicilian Pizza with Banana Peppers added. SO GOOD – And the star of the show?? THEIR BANANA PEPPERS. Never EVER had more fresh tasting peppers in my life. It was crazy how much it happened to stand out against everything else, it just showed how dedicated they are to fresh, real ingredients.
We ended the night with two desserts because we couldn’t decide.. We had their Profiteroles (pistachio, chocolate & honey vanilla gelato, warm chocolate ganache) and Zeppoles (Essentially beignets that you dip in chocolate and my cajun boy HAD to see what it was all about 😉 ) Needless to say we destroyed both desserts WITHOUT guilt!
And this was my SECOND trip here. I had been here previously with my Mom and we got to try some more of their incredible menu items.. It was just so good I had to bring my Husband because he would appreciate it’s atmosphere and delicious foods and he SO did.

SO come try it for yourself – You’ll never EVER be disappointed.. We’re already trying to plan another trip down (This time at night because the patio is lit up so beautifully you’ll feel like royalty along with the lights of downtown beside it!)
There are some amazing paleo restaurants in nearly every state and I love discovering the hidden healthy gems near us, so was very eager to try Mmm… Coffee! after reading some very promising reviews.
Their menu had many delicious paleo options so my Husband and I decided to make a trip downtown to try it out! It was in a very trendy and artistic side of town in the Lincoln Park area off of 9th and Santa Fe. Their bistro was hidden in a gorgeous and secluded courtyard shown only by their adorable sign out front.
We were immediately greeted by some of the friendliest people we’ve met in a long, long time. The owners Jami and Derek were so very sweet and inviting which made the already lovely ambiance even more comforting. We asked what they were best known for and wanted to try it all! (They were one of the first 100% grain free restaurants to open in the nation!)
We started with their amazing soup that changes daily (They’re REALLY popular for them!) And my Husband LOVED it. Said it was the best soup he’d ever had and it was accompanied by some delicious plantain chips (My obsession) !
I had their Paleo Power salad which was amazing and we split their tuna wrap (SO GOOD) and INCREDIBLE bacon wrapped stuffed dates which was chicken breast roasted in enchilada sauce, stuffed into dates and wrapped in turkey bacon! *drooldrooldrool*
We couldn’t stop there. Jami was so passionate about the food she made we had to keep trying more as they were so creative, delicious and unique! Their mocha latte was delicious and they make their own chocolate IN HOUSE, so I had to try some of their delicious concoctions!
We finished our lunch with two delicious chicken legs which were simplistic yet delicious!
We asked what the best desserts were and decided to try one of each (of a few!)
Again, Jami is INCREDIBLE. Her food was amazing but her desserts were out of this world! She’s been eating paleo for a long time so has been able to master so many different techniques. We tried their muffins, cookies, cake, granola, macaroons, and punkin’ bar. It was all SO GOOD. Did NOT taste paleo or healthy but it WAS.
Her cake was AMAZING. It was a made from BEETS. It was an adorable dark purple color with delicious looking frosting on top and tasted JUST like a red velvet unhealthy cake would taste. We decided we’re coming to her for any cakes we ever need (She had sold a wedding cake she had made while we were there!)
The inside of their shop was adorable and warm – They have wonderful options for comfortable indoor seating and gorgeous outdoor courtyard relaxing. One thing I love is when a local business supports other local businesses. They have many items available inside from other Colorado companies such as kombucha, kale chips, beef jerky, etc.
After we were done I wanted to thank them so much for all of their kindnesses, wonderful food and inspiring creativity. I had the pleasure of getting to speak with them about their journey and got to take a fun photo with them in front of their paleo sign!
And it was Derek’s idea to grab their sign from in front with the mini bike attached to take a photo with Hudson on it.. HOW CUTE?!
This is by far our favorite new paleo stop. The people were amazing, the food was outstanding and the location was comfortable and upbeet(Like my food pun? 😉 )
We’ll absolutely be back and recommend anyone in the area (or visiting the area) to try it out – You’ll never want to leave.. I’m already missing it!!
My Husband and I had only driven through Pueblo, CO to get to Texas and maybe for a pee stop.. But never had I actually ventured into this city. I am so regretting I hadn’t yet. This little town is AMAZING.
My Husband, Hudson and I decided to stay the night over in Pueblo because I had an eco-friendly Earth Day segment on KOAA News 5 EARLY in the morning the next day! Our drive down was LONG but we made it – And JUST in time to have some amazing Bingo Burger! This place is SO good. It’s like Five Guys, but better.. YES, I said it! They had SO many amazing and healthy options!
We were able to enjoy some of their signature burgers WITH the option of making it a lettuce bun to keep it paleo and we had some of their DELICIOUS sweet potato fries with their unique lemon-rosemary aioli and thai chili ketchup dipping sauces! SO good and SO much food! (We JUST finished their sweet potato fries we had brought home!) The manager Steena was so very sweet and welcoming. We’ll definitely be by again next time we’re down that way!
After our much needed and delicious dinner we headed to our hotel. (Best Western Plus – Was so incredibly displeased with their service unfortunately. We will not be staying with them again in the future) Despite the frustrations with the hotel, our next day was SO much fun. I was super nervous about being on live TV for the first time but the staff at the station was SO friendly, understanding and helpful!
I breezed through each eco-friendly item thanks to their support and then I felt sad after it was all over – I wanted to keep going! You can watch my segments here!
Although I wanted to keep going, I had a full day of fun planned with my guys – I LOVE Riverwalks (If you’ve seen my San Antonio post you’ll know I can never go back now that I’ve experienced them, I have to see them ALL!) so I wanted to visit the Arkansas River Pueblo Riverwalk. It was breathtaking! There were historic buildings surrounding an amazingly, beautifully planned walkway with mini waterfalls, artistic touches and sculptures everywhere. I felt as if I was in an art district – Something that was so unexpected but I cherished and loved every moment of it!
We built up quite an appetite walking around in the warm weather so we headed to a highly recommended local restaurant called DC’s On B Street. I had seen their reviews and food photos online and was INSTANTLY intrigued. We walked in and were pleasantly greeted by gorgeous vintage feels and the sweetest woman, Sara. We were also greeted by the fun and talented owner DC!
Their restaurant was beautiful but their food was EVEN better. They had GORGEOUS presentation with AMAZING flavor. DC is a MASTER cook and Sara has the best recommendations! Brent decided to get some fresh Halibut (From Alaska!) and I got an amazing strawberry and walnut salad. The Halibut was cooked to buttery perfection and the salad was DIVINE.
After dinner, Sara told us their pies are homemade by her talented sister! We could NOT say No!! So we got a pecan pie with a side of ice cream.. Just couldn’t resist and I am glad we didn’t it was PERFECT. And we know our Pecan Pies – Two southern folks 😉
We decided we’ll be back here EVERY TIME we’re in town – Not just because of their amazing food but because of how amazing Sara and DC are.
This ended our Pueblo trip and it was bittersweet. There’s no place like home, but we really enjoyed being here, even if just for a day! Like my title suggests, it’s a hidden gem that we’ll be HAPPY to come back to 🙂
I constantly struggle with going out to restaurants with my son – I am a little bit of a germaphobe.. And Hudson ALWAYS wants to play with his plates and throws the napkins off the table when I try to use that to set his food on them.. So I was struggling to find a way to keep his food from off the direct table while also allowing him to eat food on his own.
Then I found Simply Natural Babies disposable placemats!! They’re amazing! They have adhesive edges on the bottom so babies cannot pull or rip them off the tables – My Husband and I used them today for lunch at Red Robin and it worked amazing!! Hudson tried drawing on them, spilled milk on them and laid his food all over it – Good thing they’re so big! They covered the whole area he used and I didn’t feel grossed out at all 😉 Thank goodness!
They’re a wonderful price on Amazon and WELL worth it! Even if you don’t go out often they’re wonderful for restaurants, home, and pretty much anywhere! Try them out!

I have been obsessed with Kombucha for years now. It’s delicious, bubbly but also really healthy! (If made properly) So when I heard there was a local Kombucha tea brewery nearby I HAD to try it!
Hudson and I packed up and made the quick 20 minute drive down to Edgewater! We met up with my brother and his fiancé. It had such a beautiful and relaxed environment and the employees were very warm and inviting!
I started with their Flight of Five Kombucha which had their Cranberry Lavender, Grapefruit Citra, Orange Basil, Cranberry Punch and Hibiscus Lemon Ginger flavors.
Each one was absolutely delicious! My brother and his fiancé had never had kombucha so this was a great way for them to try out some in tons of different flavors (They’re now hooked! 😉 ) We liked them so much we had to get one of their growlers! I chose the Hibiscus Lemon Ginger flavor – It was amazing!! I loveee Ginger.
Hudson has been an eating MACHINE lately – So as soon as he started getting antsy I knew it was time for some grub! We ordered from their really healthy and great option menu! I got a basic chicken salad with their ginger peanut dressing, Hudson had a grilled cheese with apple slices, my brother ordered their chorizo tacos and his fiancé got their cheesewich sliders. Everything looked AND tasted amazing!
After looking around I saw some really amazing stuff on their walls; Yoga + Booch classes, a calendar with their events and a little area for Hudson to draw on in chalk – Just super cute and interactive. I love it!
It was a great place for Hudson to run around, for my family and I to spend some time together, for GREAT kombucha and food and just had an overall amazing atmosphere. I’ll definitely be back – Especially to have my growler refilled 😉 To end it.. When walking out I saw some blankets with a sign that said “Grab a Blanket – Have a picnic ☀” Such an awesome and creative idea, wish I would have seen it sooner! This place is definitely going to be a regular stop for us. Thanks Happy Leaf!
Ever since our anniversary trip to Blooming Beets, we’ve been really craving their incredible bacon wrapped dates.. Well, lucky for us they just released a video recipe for them! And it’s WAY easier than you’d think!!
We tried it ourselves and it was AMAZING. Start by preheating your oven to 350*. Now grab all of the ingredients you’ll need: Dates (Pitted), cashews, avocado oil, bacon and toothpicks!
Add the cashews into a processor or blender, add avocado oil and blend until smooth! (May need to continue to add avocado oil til desired texture.)
Next, add cashew butter mixture into halved dates! The more the merrier 😉
Slice your bacon in half and begin to wrap your dates in one slice, secure with a toothpick and place on sprayed pan!
Now place in heated oven til bacon is crispy!
We took out after around 20 minutes and it was not QUITE as crispy as we like so we threw it in for another 10 and it came out AMAZING!
Try it for yourself -I have a really huge sweet tooth and these are TOTALLY sweet tooth destroyers AND they’re incredibly healthy!
